Breakfast Burrito

Whether you’re having a lazy Sunday or boosting energy levels for an action packed day out, try our Breakfast Burrito for a blissful start.  If you make the salsa in advance (or buy some – we won’t tell!), using our microwave egg cooker you’ll be enjoying breakfast fast!

Ingredients

  • 2 eggs
  • 2 tbsp milk
  • Salt and pepper
  • 1 flour tortillas

For the salsa:

  • 3 fresh tomatoes
  • 1/2 medium red onion
  • 1 red chilli
  • Juice of 1 lime
  • Handful of chopped coriander
  • Salt and pepper to taste
  • ½ tsp dried oregano
  1. Finely slice the salsa ingredients, mix and season to taste.
  2. Crack two eggs into your WePrep egg poacher with the milk and seasoning and whisk. Place in the microwave on high for 90 seconds, stirring several times during cooking. Leave to stand.
  3. Cut the tortilla in half and lay one half out. Place half the scrambled egg mixture in the centre and top with a generous spoon of salsa. Fold up the bottom of the tortilla and roll up. Repeat with the other half.
  4. Voila! Your Breakfast Burrito be enjoyed immediately or, if you can wait, toasted for a few minutes in a sandwich toaster, under the grill or on a griddle.
