Poached Egg & Smashed Avocado Toast

Enjoy the perfect weekend breakfast with this delicious egg and avocado combo. Using our microwave egg cooker you’ll have rustled up this healthy brunch in minutes.

Ingredients

  • 1 egg
  • 1 avocado
  • Dash of lemon
  • Drizzle of olive oil
  • Toast to serve
  • Salt and pepper
  • Salad leaves (optional)
  1. Crack the egg into your WePrep egg cooker with 3 tbsp water and pierce the yolk and white in a couple of places. Place in the microwave on high for 90 seconds. Leave to stand.
  2. Whilst the egg is cooking, pop your toast in the toaster.
  3. Scoop your avocado into a bowl and mash.
  4. Spread the avocado onto the toast with a squeeze of lemon and dash of olive oil. Place the egg on top and season to taste. For extra flavour scatter a few salad leaves. Enjoy!
