Ingredients
- 1 egg
- 1 avocado
- Dash of lemon
- Drizzle of olive oil
- Toast to serve
- Salt and pepper
- Salad leaves (optional)
- Crack the egg into your WePrep egg cooker with 3 tbsp water and pierce the yolk and white in a couple of places. Place in the microwave on high for 90 seconds. Leave to stand.
- Whilst the egg is cooking, pop your toast in the toaster.
- Scoop your avocado into a bowl and mash.
- Spread the avocado onto the toast with a squeeze of lemon and dash of olive oil. Place the egg on top and season to taste. For extra flavour scatter a few salad leaves. Enjoy!
