Ingredients
- 1 egg
- 6 asparagus tips
- Handful of salad leaves (e.g. rocket, radicchio, baby spinach)
- Handful of fresh peas (or frozen ones, defrosted)
- A few carrot ribbons
- Drizzle of olive oil
- Squeeze of fresh lemon
- Salt and pepper
- Put the asparagus in a microwave safe bowl with a tablespoon of water. Cover with a lid and cook on high for 3 minutes.
- Crack the egg into your WePrep egg cooker with 3 tbsp water and pierce the yolk and white in a couple of places. Place in the microwave on high for 90 seconds. Leave to stand for 1 minute.
- Arrange the asparagus on a plate and top with peas, carrot ribbons and salad leaves. Drizzle on olive oil and fresh lemon juice.
- Top with your poached egg, season to taste and serve.
